Observed the Quat sanitizer spray bottle, held within the Snowfruit prep area to measure less than 150 PPM when tested with the store's Quat sanitizer test strips. Per Manufacturer's instructions, quat ammonium sanitizer should measure between 150-400 PPM. |
The PIC discarded contents of sanitizer bottle and made a fresh bottle measuring 200 PPM with the store's quat test strips. |

Observed the following food products not maintained at 41F or less when using inspector's probe thermometer: Retail sales floor, bunker cooler- cut mixed fruit bowls (x4) measured between 44F to 47F. The bowls were on the 2 tier. All bowls on the 1st tier measured 41F or less. The cold unit was in defrost mode having surface temperatures above 50F. By the end of the inspection, the unit was off defrost mode. |
The bowls were prepared yesterday and it could not be determined how long the products measured above 41F. As a result, the 4 mixed fruit bowls were voluntarily discarded by the PIC. |
