Observed several food safety issues at firm during today's inspection:
**PIC could not speak to sanitizer concentration and testing. PIC was not aware of testing of sanitizer. I walked both PIC and employee through proper sanitizer testing.
***Observed a date Marking system; but it needs consistent. Several foods were discarded today during today's inspection because of no date marking.
****Observed that PIC could not speak to Cold Holding temperatures of firms TCS foods.
*****Observed that PIC was unaware of chemical labeling once removed and placed into a new bottle. Your employees must label these chemicals to deter misuse and contamination.
******Observed that PIC was not aware of display cooler equipment. Display cooler door was removed. I discussed cooler temperatures and insuring that this equipment is working properly, closed, and keeping TCS foods safe.
***Observed that PIC was not aware of slicer cleaning logs, how and what to clean, and reason/use of slicer cleaning logs in food establishments. |

Observed no date marking on individually sliced deli meat kits kept inside Display cooler. Processed meats are used for deli sandwiches and must have date marking to show when they were open, processed, or discard dates. The case was registering at close to 50F, so I was able to take temperatures of several deli kits. |
Firm has created a date marking system but needs consistency. |

Observed no food labels on single containers of queso, pimento cheese, and Guacamole made in house.
**Also observed no 'Consumer Advisory' on individual juices made in house. There needs to be an advisory on these items because they have not been pasteurized or made inside a retail firm that inspected by TDA. |
All unlabeled foods and were removed from retail sale. Items were placed on hold until labels and consumer advisory can be created. Firm states that they have a computer system that prints labels but they are getting trained on it at the moment and will have this labeled before they begin to sell any of these items. |

Observed Display Case door removed from Display cooler. PIC stated that this was because they are working out of this case and decided to remove the door to help with productivity. (See pics)
