The open dairy and beverage cooler was scanned with an infrared thermometer at 58 degrees. Foods inside this cooler were probed with a state issued and calibrated thermometer. Chorizo 49 degrees. Turkey Franks 51 degrees. Crema Salvadorena 56 degrees. A stop sale order has been issued for all products in this cooler requiring refrigeration. |

Chlorine test strips in the kitchen expired on 9/2022. The PIC sttes that the firm prefers using Member's Mark quaternary ammonium sanitizer. No test kits for quaternary ammonium were present. Bleach was available at the 3 compartment sink. The PIC was shown the inspector's quaternary ammonium test strips and discussed how to use and read the test strips. |
