1. No date marking was observed on bags of cheese, pepperoni, and sausage in the lower chamber of the prep cooler and labeled "Keep Frozen". Discussed with PIC that these bags can be datemarked to discard 6 days after moving to the prep cooler or only thawing pizza toppings needed for the day in the prep cooler. 2. No date marking was observed on 15 opened chubs of ready to eat deli meat. Deli meats should be datemarked to discard 6 days after opening. |
