Inspector observed in the deli area, the deli slicer with build up of yellow organic matter and pieces of old deli meat under the slicer blade, blade guard and on the paddle.
*** Inspector observed in the meat prep room build up of meat and yellow organic matter in the inside of the meat grinder in the gap where the meat paddles hook up. |
The person in charge had the employees of those departments fully break down the equipment and reclean the deli slicer and the meat grinder and do a wash rinse and sanitize cycle on the equipment. |
