**Observed a variety of sushi rolls in the retail case to be out of the temperature safe zone for cold holding. Sushi rolls were checked with inspector's and chef's probe thermometers with internal temperatures ranging from 59F to 61F. Temperatures are documented in today's report. |
All 50 cases were pulled from the case and placed into the walk-in freezer as documentation was available showing sushi packages were made at 08:00. Today's inspection began at 09:25 |
