There was no date marking system in place for the sliced deli meats observed in the deli case (discussed with the owner via phone and he advised that he ordered a machine for date marking-owner advised that he was under the impression that he could not use the stickers present at the firm when the inspector mentioned them to him and inspector explained that they can be used but employees cannot tell inspector that they are holding meat longer than the required time frame or for up to two weeks).
2) There was no date marking system in place for the chili sauce that was stored in the two-door cooler located in the kitchen. |
