No date marking was observed on a large food service bucket of pepperoni and a food service bucket of shredded cheese in the lower chamber of the prep cooler. Discussed with PIC that because these items state "Keep Frozen" on the original packaging they must be date marked to discard within 7 days of placing in refrigeration. Date marking for toppings in the upper chamber of the prep cooler and on ready to eat deli meats is in compliance. |
