A knife was observed stored in the hand washing sink next to the 3 compartment sink. Myoglobin build up was also observed in the basin of this sink showing it was used to drain raw meat. Hand washing sinks may only be used for washing hands. Nothing may be stored in hand washing sinks and foods cannot be drained into hand washing sinks. The knife was moved to the 3 compartment sink to be cleaned and sanitized. The firm must also clean and sanitize this hand washing sink. |
