Observed that PIC inside kitchen could not speak to hot holding temperatures.
**Observed that PIC could not speak to Thermometer Calibration. Inspector walked PICs through this process.
**Observed that PIC could not speak to the Cooling process of there TCS foods.

Observed several foods inside beverage cooler used as prep cooler to be outside the temperature safe zone for Cold holding (41F and below). Using my calibrated probe thermometer, I was able to take internal temperatures of foods that reached on average between 50F to 56F. (See food Temperatures) |
All foods were discarded during inspection. |

Observed that cooler inside the kitchen is not adequate enough to keep food cold. The cooler is a 'beverage cooler' and can not be used as a Kitchen Cooler. Also, this cooler has been getting overstocked which is preventing it from going down to 41F or below. Cooler reached 50F. |
Inspector advised not to overstock this cooler and also that this is a beverage cooler and will not be able to maintain the correct temperature for your cold TCS foods. |
