Using my probe thermometer, I was able to take internal temperatures of TCS processed Watermelon and Cantaloupe chunks stored in the retail produce cooler. These food items reached well above 41F. The average temperature was 60F and 61F. |
All TCS processed fruit items inside the retail produce/fruit cooler were placed back into the walk-in cooler to bring down to 41F or below. All fruit was processed today 7/31/24 according to label. |
