Observed several opened chubs of ready to eat deli meat in the kitchen refrigerator with date marks of 7/13, 7/16, or no date marking at all. Observed half of a watermelon in this refrigerator with no datemarking. In the walk around cooler, observed sandwiches, wraps, wings, and fruit cups with date marks ranging from 7/13 to 7/16. The latest date mark allowable by law for items created on the date of inspection would be 7/9. Discussed datemarking with PIC and provided the firm with a copy of the TDA date marking handout. |

1.) An uncovered try of biscuits was observed in the kitchen freezer. The PIC covered these with a piece of parchment paper during the inspection. 2.) 2 large opened cans of banana pudding were observed in the kitchen refrigerator. The PIC moved this banana pudding to a plastic food storage container during the inspection. Discussed the canned foods must be moved to a food safe, non-reactive container once they have been opened. |
