Piece & Love Pie Co. is not a permitted manufacturer with the TN Dept. of Agriculture. A hold order was issued for these items. 2.) 1 Merica flavor, 6 Sweet Butter Caramel flavor, 6 Buffalo B&R Ranch flavor, 2 White Cheddar Ranch flavor, 3 Windy City flavor, 3 Say Cheeze flavor, 2 U R Hot Flavor, and 1 Sweet Bacon Caramel flavor packs of popcorn manufactured by Pop's Kernel were observed for sale. Pop's Kernel is not a permitted manufacturer with the TN Dept. of Agriculture. A hold order has been placed for these items. |

32 packages of several in house made sausages were observed in the retail meat freezer packaged using reduced oxygen packaging. This firm does not have a HACCP plan or variance to perform reduced oxygen packaging. A hold order was issued for these items. |

Two trays of green beans and several trays of baked goods were observed cooling at ambient room temperature on a speed rack in the cafe. A cafe employee was asked about the methods used to cool the green beans and other cooked foods and he stated it is allowed to cool for a little while at room temperature and then placed in the cooler. He said no one monitors the temperature of food being cooled. The PIC is being provided with a TDA cooling handout to train employees with. |

The drain pipe of the cafe hand sink was damaged recently rendering the sink unusable. The PIC states that a repair service has already been called for this sink. The hand sink in the cafe ware washing room is easily accessible with no doors between this room and cafe making it an acceptable hand sink for the cafe. |
