Observed a variety of food items in the retail hot case to be below 135F which is out of the temperature safe zone for hot holding. Temperatures were checked with Inspector's probe thermometer and consisted of BBQ wings, chicken breasts, chicken drumsticks, and a slice of pepperoni pizza. |
