1.) A jar of jalapeno peppers labeled "Refrigerate After Opening" was observed stored at ambient room temperature on top of the hot holding table. The PIC voluntarily discarded this jar. 2.) The walk in cooler was scanned in several places with an infrared surface thermometer with the lowest temperature being 44 degrees and the highest temperature being 46 degrees. Milk stored in this cooler was probed with a state issued and calibrated thermometer at 45 degrees. Milk is the only TCS item displayed in this cooler. A hold order was issued for the milk products in this cooler. |
