**Observed that the PIC inside the Produce department could not speak to sanitizer processes and concentration of utensil sanitizer or ProMaxx fruit wash.
**Observed that PIC inside the bakery department could not speak to testing of commercial dishwasher. |
I was able to walk these departments through testing sanitizer. |

Observed ProMaxx Fruit wash to be above 100 ppm after testing several times with both mine and PICs test strips. During instruction, the PIC inside the produce department was adding water to there sanitizer basin that is equipped with sanitizer dispensers. This sanitizer is already mixed with water when it comes out of the dispenser.
