The walk in cooler was scanned with an infrared surface thermometer at 47 degrees. Eggs were probed with a state issued and calibrated thermometer at 47 degrees. Cream cheese was probed with the same thermometer at 54 degrees. A hold order has been issued for all TCS foods in the walk in cooler. |
