A plastic breading container was observed on top of the meat service case with breading and pieces of fish in it. No cooked foods were available in the firm at the time of inspection. The PIC stated that this breading container has not been cleaned and sanitized since the last time it was used and was unable to state when it was used last. |

The open retail coolers were scanned with an infrared surface thermometer at 58 degrees. Foods inside this cooler were probed with a state issued and calibrated thermometer. Quail eggs 64 degrees. Kim Chi 60 degrees. Rice Noodles 51. The PIC voluntarily discarded all foods requiring refrigeration in this cooler. |

10 dozen eggs were observed for sale in Best Choices branded cartons and 1 dozen eggs were observed in an unbranded carton displayed for sale on in the open retail cooler. The eggs inside the Best Choices branded cartons were not the original eggs in them as indicated by multiple brown and blue-green eggs in them. The cartons state white eggs on them. The PIC states that these eggs are sold to the firm from a private individual. The PIC voluntarily discarded these items. These eggs were also in cold holding above 41 degrees. |

The meat band saw is directly beside the 3 compartment sink. There was no barrier installed between the pieces of equipment to prevent contamination of the band saw from the 3 compartment sink. The PIC placed a piece of Plexiglas inside the barrier slot on the 3 compartment sink during the inspection. |
