The prep cooler next to the pizza hot holding unit was scanned with an infrared surface thermometer at 55 degrees. Foods inside this cooler were probed with a state issued and calibrated thermometer. Mushrooms 57 degrees. Sausage crumbles 61 degrees. Black olives 57 degrees. Pepperoni 39 degrees. The PIC voluntarily discarded all foods from this cooler. The pepperoni was moved to a cooler that is holding food below 41 degrees. |
