After speaking with kitchen PIC through an interpreter; the firm was not able to demonstrate sanitizer knowledge. Kitchen PIC was also not aware of what sanitizer that the firm uses, or type of test strips used for Quaternary Ammonia sanitizer. |

All food items missing date marking were voluntarily discarded by PIC during inspection. |

Observed several dirty pots and food containers stored on clean rack inside the firm kitchen. PIC stated that they no longer use these containers. Inspector advised PIC to create a separate shelf for clean to separate from dirty containers. |
