The hot holding table was scanned with and infrared surface thermometer at 93 degrees. The PIC realized that the heating element for the hit holding table had not been turned on. Foods in this unit were probed with a state issued and calibrated thermometer. Bacon biscuit 111 degrees. Sausage biscuit 117 degrees. A hold order was issued for these items. |
