The HACCP plan states that pH logs are kept on file for a minimum of one year. At time of inspection the only records available to review was 04/05/2024 -06/30/24 which were on paper. The company switched to electronic records on 07/01/2024 and the only records available to review at time of inspection was 09/23/24 - 10/03/24. No records were available to review for 07/01/2024 - 09/22/2024.
The HACCP states that there are 2 CCP's: Acidification pH 3.9 4.19 and Chill Package to <40 F degrees. At time of inspection there were no electronic records kept of chilling packages. |
