I observed when speaking with PIC in charge about food safety at their store, they were not able to speak to Hot or Cold temperature. Also, the PIC needs to know Mapco Expresses processes for food safety, which is taking temperatures of hot foods throughout the day to ensure food is safe and outside the temperature safe zone for Hot and Cold holding. PIC was not aware of thermometers and equipment needed and needed instruction on how to calibrate their thermometer. PIC does not have active control of this location because of lack of Food safety knowledge. |

Observed containers of open TCS hot dogs and burritos stored in Kitchen prep cooler to be missing date marking to show when these food items were opened or when they to be discarded. |
PIC voluntarily removed all food items missing date marking. |

Observed leaking underneath hand sink in back stockroom. PIC explained that they only use this sink for dumping coffee. I advised PIC to get a sign for this sink after its repaired that states that this sink is 'only' used for dumping coffee.
**I also observed the 3 Compartment sink drain to be backing up when wastewater is drained down the wash basin. The floor drain is draining very slowly and needs to be unclogged to prevent back up when in use. |
PIC placed a work order for repair. |
