1.) A pot of beef was observed stored on a rack in the kitchen area at 82 degrees. The PIC states that this beef is cooked and then used for soups prepared to customer order. The cook states that this pot of beef was prepared approximately one hour before it was observed during inspection. The PIC directed this beef to be reheated to the required temperature and then placed in hot holding. 2.) Several large pots of sauce and other plant foods prepared in the firm to cool. These pots are too large to allow for appropriate cooling times. |
