Observed several sushi rolls with the internal temperature above 41F using my probe thermometer. The average temperature was between 47 to 52F |
PIC was able to show when these rolls were made (8:30 am) and was allowed to place them back into cooling inside the walk-in freezer. After inspection, sushi temperature was well below 41F after PIC placed them into the freezer. |
