During a records review of HACCP records, was observed to no monitoring records with CCP2. Observation of records from 7 May to 8 November 2024, facility was not indicating record the time the rice was used or discarded. CCP2 indicates acidified sushi rice is to be labeled with time of preparation and discard time. Facility did not have a acidified rice label at the container and no monitoring records for CCP2 during the date range indicated above. |
