Observed several sushi rolls with an internal temperature of above 41F using my probe thermometer. (Average temperature 48 to 50F) |
PIC was able to show that these rolls were made this morning and was able to re-cool their sushi until the end of inspection where the rolls registered at 36F using probe thermometer. |

Observed open package of defrosted TCS Edamame, a food container of cucumber sticks and lettuce for sushi preparation all missing proper date marking of when these items were opened or when they need to be discarded. |
All food product missing date marking was discarded by PIC during inspection. |

Observed condenser was leaking into a cup inside the prep table cooler making the area open to food contamination by non-potable water. |
PIC moved all TCS foods from underneath the condenser and was directed to not store any foods here until this has been repaired. |
