The 3 compartment sink was set up for ware washing upon inspector's arrival at the firm. The sanitizer solution was tested with both the firm's test kits as well as the inspector's test kits. Both test kits indicated 0 ppm of sanitizer in this solution. The PIC moved the sanitizer dispenser hose to the second compartment and ran it to attempt to get a sanitizer reading. Foam was observed coming from this hose like a quaternary ammonium sanitizer but when tested it reads 0 ppm. |

All opened chubs of ready to eat deli meat were observed to have discard dates that are 8 days beyond the date of creation. Only one chub of deli meat was observed to be out of date. (Opened 10/31. Discard date 11/7. Should have been 11/6). The PIC voluntarily discarded this chub. |
