Observed chicken wings in back storage cooler that appeared to be partially cooked. PIC stated firm par-cooks the wings from raw, cools them, and then re-fries them to get them "all the way" cooked. PIC was unable to demonstrate knowledge of proper cooking of raw animal proteins (must be cooked all the way through to 165 degrees F the first-time chicken is heat treated/cooked). |
