Observed sushi rolls and poke bowles in display case to be in temperature danger zone. Items included Crunchy Crab Roll at 51 degrees F. Flyin Hawaiian Poke Bowl at 72 degrees F, Avocado Spring Roll at 49 degrees F, Ninja Roll at 47 degrees F, Caterpillar Roll at 47 degrees F. All temperatures were taken with inspector probe thermometer. |
PIC removed items from display case, and placed in walk in freezer. Inspection was at 8:45 AM and rice was in the 4 hour window to be properly chilled. At end of inspection, PIC temped sushi roll in walk in freezer with firms calibrated thermometer. Sushi had internal temperature of 41 degrees F |
