All temperatures were taken with inspector probe thermometer. PIC removed items from display case, and placed in walk in freezer. Inspection was at 8:45 AM and rice was in the 4 hour window to be properly chilled. At end of inspection, PIC temped sushi roll in walk in freezer with firms calibrated thermometer.
