Foods inside this hot holding unit was probed with a state issued and calibrated thermometer with a hot dog at 110 degrees internal temperature and a chicken egg roll at 102 degrees internal temperature. The PIC voluntarily directed a deli employee to remove this product from sale to discard. During the complaint investigation that trigger this inspection the PIC also called to place a service ticket for repairs to this hot holding unit. The lights of the unit were turned off and it was taken out of service until repairs are completed. Priority (P) 0
