The hot holding table was scanned with an infrared surface thermometer at 131 degrees. Foods inside this warmer were probed with a state issued and calibrated thermometer. Smoked sausage 91 degrees. Chicken wings 109 degrees. Breakfast biscuit 122. Grits 130. The PIC voluntarily discarded all items in this warmer. It was observed that the controls for this warmer were set too low to hold proper hot holding temperatures. These controls were adjusted after inspecting other areas of the firm the inspector checked the temperature of the hot holding table again with an infrared surface thermometer at 154 degrees indicating that it does achieve proper temperatures for hot holding. |
