#1-Retail Warmer- Using a state issued and calibrated probe thermometer, Chicken wings stored on the bottom shelf of the retail warmer were discovered to be below the safe hot holding temperature of 135 degrees. PIC discarded all out of temperature food. Discussed with PIC that their warmer appears to have the heat source on the top of the warmer and a noticeable temperature change occurred from the top to bottom shelves.
#2- Roller Grill- Using a state issued and calibrated probe thermometer, Taco Taquito and other items on the retail roller grill were discovered to be below the safe hot holding temperature of 135 degrees. PIC discarded all out of temperature products and discovered that the roller grill was only set to 123 degrees. |

#1-Firm has several items that have been date marked over 7 days and still in use. Nacho Cheese had a date mark of 12/23-12/28 and was still in use on 12/30. Chillie was still in use on 12/30 with date marking of 12/23-12/29.
#2-Per the firms date marking, doughnut icing had a 2 day shelf life from 12/15-12/17 and was still in use on 12/30.
#3- iced coffee and creamers either did not have a date mark or had a dispose of date by 12/29. A variance was discussed but the firm does not have one for creamers.
