Dried food residue was observed on the end weight, product carriage, and under the blade of the deli slicer used for to slice ready to eat deli meat. A second slicer used to cut raw meat appeared visually clean. The PIC and meat cutter were both able to describe the requirement to sanitize these food contact surfaces every 4 hours. |

The retail produce cooler was scanned with an infrared surface thermometer at 48 degrees. Foods displayed in this cooler were probed with a state issued and calibrated thermometer. Duice de Camote (candied sweet potato) @42 degrees. Probiotic drink @ 45 degrees. Rice pudding @ 42 degrees. The thermometers in this cooler both displayed 50 degrees when first observed. During discussion with the PIC it was observed that this cooler began to lower in temperature to below 40 degrees. The PIC voluntarily discarded all foods requiring refrigeration in this cooler. Items include 15 packs of candied sweet potato and candied pumpkin, 10 bags of prepacked fruit pulp, 15 packs of husked corn on the cob, 4 packs of cut cantaloupe, 34 packs of nance fruit, 12 Reina caramel flan, 9 Yolita caramel flan, 10 Yocrunch multipacks, 10 Danonino smoothie multipacks, 7 Danimals smoothie multipacks, 12 Reina rice pudding, 13 El Mexicano rice pudding, 3 Raymundo's parfait multipacks, 27 cups individual parfait cups (multiple brands), 8 Yolita assorted geltains. |

A bag of frozen sausage was observed placed on a drain board of the 3 compartment sink to sanitize. Discussed thawing items under cool running water to quick thaw. The 3 compartment sink for this facility does not have a faucet. This sink can only dispense water from a dishwashing wand that requires a handle be squeezed in order to dispense water. This firm does not have the proper equipment to easily quick thaw items under running water. It does not offer cooked food and does not have cooking equipment to thaw items during cooking. The PIC moved this sausage to the walk in cooler in order to continue thawing. |
