Observed when asking PIC about the firm's washing process. The PIC explained that they clean in one basin and in the 3rd basin they dry the dishes and equipment. PIC informed firm of 3 compartment sink process with a 'sanitize' step to properly clean. PIC was not knowledgeable of sanitizer use, cold holding, or hot holding. |

Observed no date marking on cut strawberries, cucumbers, and blue berries used in smoothies and stored in counter cooler. Observed no date marking on containers of smoothie juice used at firm for sampling. Also, I observed no date marking on several open items of shredded chicken and sliced tomatoes. |

Observed leaking from underneath the rinse basin of 3 Compartment sink, where the basin meets the PVC pipe. I also observed a floor drain today that drained very slowly during sink operation. |
I was able to get with Farmer's Market security and talk with Mr. Charles in maintenance who voluntarily offered to the fix floor drain issue. |
