1. A box containing food service boxes for chicken wings was observed stored directly on the floor beside the prep cooler. This box was extremely wet on the panel that was directly in contact with the floor. A pool of water has formed on the ground where this box was located. Because these single service items are now contaminated with this water the PIC voluntarily discarded the case. 2.) Several stacks of boxes to service chicken wings were observed on a shelf below the pizza oven not inverted or otherwise protected from contamination. |
