Retail Deli Case (packaged meats/ cheese)- Retail case was in defrost with the firm's own thermometer reading 53 degrees. Food was checked and using a state issued and calibrated probe thermometer Ham, Beef, and Cheese were found to be above the safe cold holding temperature of 41 degrees. |
PIC had employee discard food above 41 degrees and began to relocate foods below 41 degrees into another cold holding area. |
