Observed after discussing firm processes, the PIC could not speak to date marking of all TCS foods or the sanitizer parts per million when tested by firm. Also, when asked, PIC was not knowledgeable of the Health Policy at firm and was not able to speak to food borne illnesses and their symptoms. |

During discussion of firm processes, the PIC stated that 100 ppm was the rate needed to effectively sanitize. Per manufacturer's instructions, a rate of 200 to 400 ppm is the correct formulation for sanitizing of equipment and dishes. |
