The firm's 7.0 pH buffer solution was expired as of 11/4/2024. Date of inspection 1/8/2025. The Variance documentation for this firm states that it must perform a daily two-point calibration of it's pH meter against a 7.0 pH buffer solution and a 4.0 pH buffer solution. This firm is unable to calibrate its pH meter according to Variance documents because it does not have an in date 7.0 pH buffer solution. A hold order was issued for all sushi well as a batch of acidified white rice that had been created the day of inspection. An order of closure was issued until the firm can obtain new buffer solution and show that the pH meter can be calibrated according to Variance documents. |
