PIC stated that they only clean once or twice a month. *Observed deli slicer used once a day with encrusted white organic matter set up on the blade and also where the blade meets the slicer. **Observed several metal serving pans stored clean on the rack inside the kitchen with encrusted labels still on the containers. PIC removed all parts that can be removed from the juicer and deli slicer and soaked them in the wash basin. The water is settling into the cracks and voids in the floor and not draining properly. After inspecting the area for water issues, I noted (see pics) heavy leaking of wastewater directly onto the floor of the kettle and next to additional steamer.
