Observed when asking the PIC inside the kitchen about cold or hot holding temperatures of the firm's TCS foods the PIC could not speak to correct temperatures. I also observed that when I asked what process that the firm is using for Food Safety the PIC stated that they did not know. All foods at location were tempted using my probe thermometer for Food Safety. |
I discussed firm processes and gave Food Safety guide for reference. |
