The PIC stated that they use 'hot food' to calibrate their probe thermometers before use. Please ensure all probe thermometers are calibrated with an 'ice slurry' to check if thermometers reach 32F, which is the proper calibration. I walked all PICs through proper ice slurry calibration. The cooler registered at 38F. The thermometer registered at 40F but when thermometer was removed, checked, and placed back into cooler the thermometer temperature began to rise to 50F. The thermometer sat inside of cooler for several minutes and still maintained 50F.
