01 0080-04-09-.02(1)(b) Demonstration of knowledge out Observe when asking PIC to test sanitizer they filled the basin with only water and dipped test strip for several seconds, without adding any sanitizer. PIC was unaware of where and what sanitizer the firm was using but the firm had several clean dishes used this morning. PIC voluntarily moved dishes to wash basin for a full wash, rinse, and sanitize using the proper sanitizer formulation made by PIC with instruction by inspector. Priority Foundation (PF) 0

14 0080-04-09-.04(5)(a)16 Sanitizer concentration shall be accurately determined out Observed when asking PIC to test sanitizer that they could not speak to the proper rate needed to effectively sanitize. PIC stated that they are looking for the color 'green' when they are testing sanitizer, but the firm's test strips have 4 types of 'green' rates listed from 150 to 500 ppm. I walked PIC through proper sanitizer testing where new sanitizer reached adequately between the proper formulation of 200 to 400 parts per million using mine and firm's test strips.
