01 0080-04-09-.02(1)(b) Demonstration of knowledge out Observed when asking PIC about the firm's processes for Food Safety they were not able to speak to the firm's hot holding of roller grill foods or the firm's TILT process for their hot box items. PIC stated that they were using temperature for the firm's Hot Box foods and using TILT for roller grill hot dogs for food safety. Per the firm's processes, hot dogs are held on temperature and hot box items use TILT for food safety. I discussed and reinforced the firm's Food Safety practices. Priority Foundation (PF) 0

14 0080-04-09-.04(7)(c) Hot water and/or sufficient chemical sanitizer; default time of 30 seconds in contact with utensils; see manufacture's instructions out Observed when testing the firm's Quaternary Ammonia sanitizer that it registered well below 100 ppm using mine and the firm's test strips. PIC also stated during testing that the rate should be 100 ppm for properly sanitizing of utensils and equipment. Per the manufacturer's instructions, sanitizer must be at or above 200 ppm for proper sanitizing. PIC remade several buckets of Quaternary Ammonia sanitizer until it dispensed to the proper parts per million (200-400 ppm) Priority (P) 0
