Chili in clear large plastic containers in the TCS walk in cold holding unit did not have a preparation/open or discard/expiration date. Deli meat sandwiches did not have preparation or discard date. Deli meat being sliced and then frozen were observed to not have a preparation date or open date. Several of the ready to eat foods, including devil egg filling, TCS sandwiches (made in house), pasta salad (made in house), TCS salads (made in house) in the cold holding display area were observed to have 8 days rather than required 7 date marking system. Deli meats in the small makeshift unit had a preparation date of February 8 2025 and a discard date of February 15, 2025, these deli meats are prepared then frozen, then thawed before their use in food preparation area. Facility is placing 9 days on these deli meats.
Discussed with Person in charge proper date marking when items are be open/prepared and then frozen. |
