The Hot holding table was scanned with an infrared surface thermometer at 120 degrees. Foods inside this unit were probed with a state issued and calibrated thermometer with potato wedges at 121 degrees, chicken wings at 110 degrees, and fried chicken wings at 122 degrees. The PIC voluntarily discarded all food in this hot holding unit during the inspection. |
