The PIC voluntarily discarded all TCS items from this cooler. 2.) The walk in cooler was scanned with an infrared surface thermometer at 45 degrees. 2 Boxes of chicken cuts in the walk in cooler were probed with a state issued and calibrated thermometer with one box at 49 degrees and one box at 42 degrees. 6 boxes of chicken cuts were placed under a hold order during the inspection.
