1.) The kitchen reach in cooler was scanned with and infrared surface thermometer at 47 degrees. Foods inside this cooler were probed with a state issued and calibrated thermometer with shredded cheese at 48 degrees, mushrooms at 47 degrees, olives at 47 degrees, and chicken tenderloins at 46 degrees. The PIC voluntarily discarded all TCS items from this cooler. 2.) The walk in cooler was scanned with an infrared surface thermometer at 45 degrees. 2 Boxes of chicken cuts in the walk in cooler were probed with a state issued and calibrated thermometer with one box at 49 degrees and one box at 42 degrees. 6 boxes of chicken cuts were placed under a hold order during the inspection. |
