During today's inspection, I asked the only PIC at firm what their cooler temperatures were while reading the 'firm's case thermometer' for the firm's milk and TCS items and the PIC stated 4F. All cold TCS foods must be below 41F using a proper case thermometer. Both firm's cold case thermometers registered at 100F during today's inspection. (see pics) |

Observed 'HOT BOX' thermometers' being used inside of TCS milk cooler. These thermometers can only be used for hot boxes, ovens, and warmers because the temperature only goes down to 100F. (see pics). Thermometers for coolers and freezers must go down below 41F. |
