3- Compartment sink- firm uses a sanitizer dispenser that was only dispensing sanitizer at 100 PPM. Per Manufactures instructions, firm needs 200 PPM for that sanitizer, showed PIC where to find the PPM needed on the sanitizer label and the Food Fact Sheet they were given during the last inspection. |

Pizza Reach-in- Using a state issued and calibrated probe thermometer food being held in the top and bottom portion of the cooler were above the safe cold holding temperature of 41 degrees. I tested the sausage and pepperoni from the top of the reach-in and the largest open jar on the bottom of the reach-in. The top temperatures were 51 and bottom was 53 degrees. Advised PIC that open, cut, and food needing to be refrigerated will have to be discarded. |
