Observed several TCS open prepped foods from the night before missing proper date marking on when the foods were opened/processed and when they need to be discarded. PIC stated these TCS items are always prepped the night before. Several containers of TCS prepped foods were in bulk containers. |
All open and prepped TCS foods missing proper date marking were voluntarily discarded by PIC during inspection. The firm is trying to utilize a date dot system but could not speak to it. |
